A winter favourite and by far the easiest soup to make. Throw it all in the pot and it’s ready in know time. INGREDIENTS
- 1 tbsp olive oil - 1 onion diced - 2 leeks - 2 knobs garlic - 6-8 potatoes cut - 2 carrots - 2 celery sticks (optional) - 2 tsp cumin powder (optional) - 2 to 3 cups of chicken stock - 2 cups water (more if don’t want it thick) - 1/2 tsp salt PREP - place oil in a pot - cut up all veggies and cook for 5 minutes - add in cumin and stir - add chicken stock and water and bring to boil - simmer for 20 minutes or till veggies soft - use stick mixer to blend all together - ENJOY with some crusty bread BENEFITS OF LEEKS - vitamin A, C & K - increases immune system - improves vision - natural diuretic - reduces risk of cataracts - low in calories and low GI - high in fibre BENEFITS OF POTATO - high fibre - vitamin C - high in potassium - regulates blood pressure - improves brain health - may relieve PMS - good for bones
