Curried Sausages

This winter warmer is a fav of mine and the whole fam. So easy to whip up and oh so hearty and tasty.
INGREDIENTS
- 1 tbsp of olive oil
- 1 brown onion
- 800g beef sausages (or 2 for each fam member)
- 2 carrots chopped skin on
- 2 garlic gloves crushed or chopped
- 1 tbsp curry powder
- 2 tbsp fruit chutney
- 2 cups chicken stock
- 1 cup frozen peas
- 1 cup corn kernels (optional)
- steamed rice or mash potato for serving 


PREP
- cook sausages, cut finely and set aside
- place oil in pan or pot
- add carrots cook for 5 minutes to soften
- add onion and garlic
- add curry powder and stir
- add fruit chutney and stir
- add chicken stock
- add in cut up sausage pieces and cook 5 minutes
- add in peas and corn stir for further 5 minutes
- serve with either rice or mash potato 
- for some crunch you could serve with papadums
- ENJOY
