When I first heard about pancakes with no flour I must admit I rolled my eyes thinking that would taste naasty!!
But as they say, don‘t knock it till you try it.
This super easy and delicious recipe is so quick to whip up.
- Put all ingredients in a bowl (except coconut oil and blueberries)
- Blend with stick mixer until creamy and combined
- Heat coconut oil in pan on medium heat
- Use 1 cup measuring spoon and scoop into hot pan
- Make each one to your desired size
- Add a few blueberries before you flip
- Flip once the sides bubble 2-3 mins each side
- Drizzle with some Maple syrup
- Sprinkle more Blueberries on top
